Our philosophy

Our philosophy is based on Tradition and Simplicity giving us a long tradition in the producing charcuterie that gratify and satisfy different variety of taste.  Our company is one of the companies that founded the association “Capocollo of Martina Franca” representing a type of salami typical of the gastronomic culture of this region. The “Capocollo of Martina Franca” is presided over by Slow Food, and they work together in protecting the quality and originality of this salami. The “Capocollo of Martina Franca” is the best known product of our region and is considered to be among the highest ranking meat products in the whole of Puglia. Apart from Capocollo we produce many other meat products, all tied to local traditions and processed exclusively by hand.

An essential part in the production of excellent sausages is the local tradition of breeding pigs which takes place in various farms in the Valle d’Itria and around Apulia. We have created an association called “Comunità del suino della Valle d’Itria” which is a voluntary group of local farmers and processors of pig charcuterie in the region. 

Our aim is to protect and promote the breeding of pigs throughout the region. The pigs we use today are historically bred from three original species called Large White, Landrace and Duroc. These three breeds were roaming free in the countryside and bred within themselves without the influence of humans. Their diet is brought to them from their original feeding grounds such as acorns, roots and herbs from the Macedonian oak forests and densely growing evergreen shrubs from Marquis shrubland.
