Pancetta Tesa is obtained by working the belly of pork with salt, pepper and cooked wine and is suspended by hangers made from special wood fragno for a period of 80-180 days. His smoking is carried out immediately after marinating in mulled wine, made from grapes typical Verdeca, and after this phase begins its slow maturation.

Raw Material
Pigmeat of origin and local origin, the national need. The anatomical part used is the pork belly.

Appearance
The color of the flesh is opposed to white wine red net of lard.

Taste
Delicate, with intense notes of toasted aroma and a pronounced due to the use of pepper and of smoking.

Tips
We recommend to consume natural, finely sliced ​​or diced, with “taralli” and bread.
