The Filetto Lardellato is one of the meat of excellence of our territory, is made from pork fillet, close to the chest, part of which is very lean left the lard of the rind so that gives softness to the flesh during ripening. After trimming, the whole pieces are sprinkled with salt and pepper are placed by hand and then marinated in mulled wine for a short time, after which binds with string to allow the natural maturing hung in suitable habitats.
