The lean pork, cut into coarse called "tip of the knife," are seasoned with salt, pepper, and sweet wine of the grape Verdeca. The mixture is stuffed into an intestine pork fat, which helps extend the maturing up to 80 days, while remaining a smooth texture.

Soppressata, inserted in the list of Traditional Agri Products as a typical name “subburséte”, is obtained by processing a knife of pork, a small percentage of fat, salt, pepper and is stuffed into natural casing pork characterized by enlarged and irregular shape, from cecum, which gives the product a softer texture than other meats, after filling is smoked, with fragno bark, husk and almond essences of the Mediterranean. It is then aged for over two months in our cool and airy local.

Raw Material
Pig meat of local origin, and at necessary National. The anatomical parts used are the thigh, shoulder, and a small quantity of fat (10%).

Appearance
The grain is rather coarse, since the cut of meat at "the tip of a knife", the color is bright red interspersed by fat.

Taste
Smooth yet flavorful, with hints of smoke.
